Designed as a party-sized prepared mix that is loaded with essence associated with Christmas time, making it ideal for hosting a festive gathering. Reserve the remaining cordial for brunch beverages, desserts, or to mix more rounds of bikinis.

The Bikini Cocktail

Yields 10 servings

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Combine every components into a pan, heat until it reaches a simmer, stirring so the sugar melts. Then, remove from the burner and leave to cool fully. Decant into an sealable bottle, close it and refrigerate it in the refrigerator, it can be stored for around a month.

Preparing the Cocktail Base: Pour all the liquid ingredients into one large bottle, allow it to infuse for one hour, then filter it preferably using muslin, to ensure it's fully clarified.

When ready to serve: Pour 85ml of the cocktail base to a mixing glass filled with ice, and agitate lightly for one minute to cool it down. Filter into a frosted cocktail glass or similar, garnish with a few cranberries and finish by giving it a brief mist with the mandarin essence over the top.
